Classic Salsa Verde

This is the salsa that started everything. My mother made it in a molcajete every Sunday morning. I make it in my wooden mortar and pestle every Sunday morning. Some things do not need to change.
Ingredients
- 6 tomatillos, husked and quartered
- 2 cloves garlic
- 1 small white onion, roughly chopped
- 1 jalapeno, seeds removed
- 1/2 cup fresh cilantro
- Juice of 1 lime
- 1/2 teaspoon coarse salt
Instructions
- Place the garlic and salt in your mortar and grind into a paste.
- Add the jalapeno and grind to combine.
- Add the tomatillos in batches, grinding and pressing until broken down.
- Add the onion and grind until incorporated but still slightly chunky.
- Add the cilantro and grind lightly to release the oils without fully breaking it down.
- Stir in the lime juice and taste for salt.
- Let rest for 15 minutes before serving for the flavors to come together.
Serve with: tacos, eggs, grilled meats, tortilla chips, or drizzled over rice.
