Classic Salsa Verde

This is the salsa that started everything. My mother made it in a molcajete every Sunday morning. I make it in my wooden mortar and pestle every Sunday morning. Some things do not need to change.

Ingredients

  • 6 tomatillos, husked and quartered
  • 2 cloves garlic
  • 1 small white onion, roughly chopped
  • 1 jalapeno, seeds removed
  • 1/2 cup fresh cilantro
  • Juice of 1 lime
  • 1/2 teaspoon coarse salt

Instructions

  1. Place the garlic and salt in your mortar and grind into a paste.
  2. Add the jalapeno and grind to combine.
  3. Add the tomatillos in batches, grinding and pressing until broken down.
  4. Add the onion and grind until incorporated but still slightly chunky.
  5. Add the cilantro and grind lightly to release the oils without fully breaking it down.
  6. Stir in the lime juice and taste for salt.
  7. Let rest for 15 minutes before serving for the flavors to come together.

Serve with: tacos, eggs, grilled meats, tortilla chips, or drizzled over rice.
