Guacamole

I make this every Sunday. The wood holds the lime. The garlic stays in the grain. By next week the wooden mortar and pestle already knows the recipe.
Ingredients
- 3 ripe avocados
- 1 clove garlic
- 1/2 teaspoon coarse salt
- Juice of 1 lime
- 1/2 small white onion, finely diced
- 1 small tomato, seeds removed, diced
- 2 tablespoons fresh cilantro, chopped
- 1 serrano pepper, finely minced (optional)
Instructions
- Place the garlic and salt in your mortar and grind into a paste.
- Add the serrano pepper if using and grind to combine.
- Halve the avocados, remove the pit, and scoop the flesh into the mortar.
- Mash to your preferred texture — chunky or smooth.
- Add lime juice, onion, tomato, and cilantro. Mix gently with the pestle.
- Taste and adjust salt and lime as needed.
Serve with: tortilla chips, tacos, grilled fish, or straight from the mortar.
