Guacamole

I make this every Sunday. The wood holds the lime. The garlic stays in the grain. By next week the wooden mortar and pestle already knows the recipe.

Ingredients

  • 3 ripe avocados
  • 1 clove garlic
  • 1/2 teaspoon coarse salt
  • Juice of 1 lime
  • 1/2 small white onion, finely diced
  • 1 small tomato, seeds removed, diced
  • 2 tablespoons fresh cilantro, chopped
  • 1 serrano pepper, finely minced (optional)

Instructions

  1. Place the garlic and salt in your mortar and grind into a paste.
  2. Add the serrano pepper if using and grind to combine.
  3. Halve the avocados, remove the pit, and scoop the flesh into the mortar.
  4. Mash to your preferred texture — chunky or smooth.
  5. Add lime juice, onion, tomato, and cilantro. Mix gently with the pestle.
  6. Taste and adjust salt and lime as needed.

Serve with: tortilla chips, tacos, grilled fish, or straight from the mortar.
